Keeping soup supplies in your pantry

Different types of stocks aren't the only items you need to have close by when you're craving soup. This soup is great basic comfort food. Leeks (which look sort of like overgrown green onions) must be sliced and then soaked and washed thoroughly to remove dirt and sand deep down in the bulb. Check out Figure 8-1 to see how to cut up a leek. Swish sliced leeks around in a bowl of cold water. Soak them for a few minutes until the dirt and grit settle to the bottom of the bowl. Lift the leeks out of the water and drain on a paper towel. Repeat the procedure again with fresh water. The U.S. Department of Agriculture's Dietary Guidelines for Americans suggest at least five servings of fruits and vegetables every day to ensure adequate intake of vitamins, minerals, and fiber. Because processed foods have many toxins, you must cook as much from scratch as possible. So for convenience sake, keep your meals simple in preparation. You may want to prepare ahead and refrigerate your dressings and toppings. Or you could make a hot soup for dinner, refrigerate, and eat the leftovers for lunch. Don't save leftovers more than two days. Make sure they are covered. Try baking several potatoes at one time, refrigerate and put them in a salad the next night. Six grams of salt a day are enough

Ready-made soups, ready-made meals (deep-frozen or in tins), ready-made sauces Cooking salt, curry, stock cubes, spice mixtures, soup and meat extracts, all ready-made sauces and marinades, mustard, ketchup It is tedious to calculate your exact daily salt intake and generally impractical. You should therefore follow these rules avoid adding salt to meals and avoid the consumption of very salty foods, such as salted pork, salted nuts, ready-made soups, smoked meats and preserved foods. Herbs and spices can greatly improve the taste of meals that are low in salt. Treatment For Periods Of Orthostatic Decompensation

Often, however, no cause is found. The patient appears to respond to management with volume expansion. The first approach is the bouillon treatment. The patient makes one of these extremely salty soups and drinks about five 8-ounce servings in half a day. An alternative is supplemental sodium chloride, 2 g three times daily, and a minimum of eight 8-ounce servings of fluids daily for 2 days. If the patient does not have improvement with this regimen or reports that fluid is not being retained, desmopressin, one puff each nostril at bedtime, is taken for 1 week. If you take oral hypoglycemic pills, you must watch for signs of low blood sugar during any illness that causes you to vomit or keeps you from eating and drinking normally. The hypoglycemic pills you took before your illness continue working to lower your blood sugar even when you do not increase it by taking in food. Try to replace missing carbohydrates by eating soup, crackers, or toast, or by drinking ginger ale or cola.

Creating Creamy Concoctions

Who doesn't love a delicious creamy soup But as you probably know, putting cream in soups adds calories and saturated fat, neither of which are very good for a diabetic diet. If you can't get enough of creamy soups, we have some good news. You can have a great creamy texture without the stuff you don't need. One great way to get the creamy texture without the bad stuff is to substitute 2 percent milk for cream in your favorite soups. It gives you plenty of the creaminess and mouth feel you expect because it does have some fat and body, but it cuts the fat grams and calories. What changes should be made in the insulin regimen during periods of an acute illness

Basically, the intensive insulin regimen is followed, as it is, provided the patient is normally fed. If needed, the doses of 'prandial' and basal insulin are increased. Sometimes it may be necessary to administer rapid-acting insulin (or even better a rapid-acting insulin analogue) between meals. In this case, small doses are preferred. If the patient is unable to receive food, the dose of basal insulin is administered normally and, if needed, rapid-acting insulin is administered every 4-6 hours, or a rapid-acting analogue every 3-4 hours. At the same time, intake of carbohydrates in the form of liquid or semi-solid food (i.e., juice, refreshments, soups, puree, etc.) is recommended. We have all been indoctrinated about how good soup is for us. Start reading the labels. Canned soups are typically from 8002400 mg of sodium per serving. A serving is not a bowl A serving is 1 2 cup or typically 2.5 servings per can. My daily limit is 1500 mg. One bowl of canned soup would put me over my limit. The average American consumes in excess of 4000 mg of sodium per day. The recommended daily allowance for a healthy normal person is 2500 mg or less per day. A restricted sodium diet is from 1500-2000 mg per day. Our bodies only need from 250-300 mg per day. We don't need it we just like the taste of it.

Keep the vents to the bedrooms closed to reduce the air turbulence there but leave the cold air return open. Clean the vents in other rooms each week along with floors and carpets by pulling up the grating and reaching down the passage as far as possible.

Extra Diet Tips For The Elderly

Good advice is to return to old fashioned home cooking with its flour and butter, lard and cream, homemade pasta, olive oil and soup, coarse cereal grains and plain fruit. Chinese food

You can eat some great Chinese food and not have to worry about upsetting your diet plan. Any of the soups on the menu will be delicious and fill you up. Stick to vegetable dishes with small amounts of meat in them. Avoid fried dishes, whether they're meats, tofu, or rice and noodles. Steamed dishes are a much better choice. Potstickers, an appetizer often found on the menu, and sweet-and-sour pork will really throw off your calorie count and your fat intake. Stay away from the almond cookies that often follow Chinese meals.

Tooth Decay

Milk has other disadvantages dozens of antibiotics, both by feed and by shot, bovine growth hormone, chemicals added in milk processing, the bad effects of homogenization, and allergy to milk. Yet, in a choice between milk drinking and bone loss, one must choose the milk. Once you're feeling better, try adding toast, vanilla wafers, and small amounts of food from your regular meal plan. Avoid spicy foods.

Increase Minerals

Adding water to the diet could be the most difficult of tasks if your elderly loved one doesn't like it. Calcium should be in the form of milk, magnesium as a tablet. When tablets cannot be swallowed use magnesium oxide powder (see Sources). Use 1 8 tsp. added to cooked cereal, soup, stew, pudding. Magnesium, being a mineral, does not get destroyed as vitamins may. You can add it anywhere in the diet where it won't be tasted. Notice how calming it is to have extra magnesium in this gradual way. Stick to tomato-based sauces and avoid the creamy, buttery, cheesy sauces. Minestrone soup is a hearty vegetable soup that is low in fat. Pasta in general is fine as long as the sauce isn't fatty. The problem with the pasta, however, is that the quantity is almost always too great. Share it or take half home. Sausage, because of all the added fats, is a poor choice, whether served with pasta or placed on pizza. Pesto sauce can be made with little fat. If you love the taste of basil, as Dr. Rubin does, ask for a lowfat version of this classic sauce. Ask whether the kitchen staff will make garlic bread with roasted garlic alone, without the butter that often accompanies it. You'll be delighted with the delicious taste. Avoid Caesar salad and dishes made with a lot of cheese, such as cheese-filled ravioli.
