Green Giant' Mexicorn"-whole kernel corn with red and green peppers-makes a colorful and easy substitute for the frozen corn and roasted peppers.

1. Heat oven to 350T. Spray 9-inch glass pie plate with cooking spray. In medium bowl, stir together all ingredients except corn, cheese and tomato until blended. Stir in remaining ingredients; pour into pie plate.

2. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
