Oat Bran Muffins

2 1/4 c. oatbran cereal, uncooked

1/4 c. chopped nuts

1/4 c. raisins

2 tsp. baking powder

2 eggs, beaten

2 tbsp. vegetable oil

Preheat oven to 425 degrees. Spray 12 medium sized muffin tins with Pam or line with paper baking cups. In large bowl combine oat bran cereal, nuts, raisins, baking powder and salt. Add remaining ingredients; mix just until all dry ingredients are moistened. Fill prepared muffin cups almost full. Bake 15-17 minutes, or until golden brown. Serve warm. 12 servings, 1 serving = 1 muffin. 45 g. chol; 3 g. pro; 5 g. fat; 114 cal; 2.6 g. fiber; 188 mg. sodium; 46 mg. chol.


1/2 c. dates, chopped

1/2 c. crushed pineapple (packed in juice)

1 c. water

1/4 lb. margarine

1 tsp. soda

1 tsp. vanilla

2 eggs

1/2 c. chopped nuts

Boil raisins, dates, pineapple and water for 3 minutes. Add margarine and let cool. Beat eggs and vanilla. Add flour sifted with soda. Add cooled fruit mixture and nuts, mixing well. Pour into greased and floured 9 x 13 inch pan. Bake in 350 degree oven approximately 25 minutes, or until a toothpick in center comes out clean. Cool. May frost with 8 ounce cream cheese mixed with 1/4 cup honey.
